The Cutting Edge

When you think of kitchen cutlery it’s not likely that poultry shears come to mind but they are an important kitchen tool. A good pair of poultry shears is designed in such a way that they can be pulled apart into two separate pieces so that they may be thoroughly cleaned. Hygiene is important in any food preparation and critically so when it comes to working with poultry. While you would never put your good silver knives and cutlery in the dishwasher it’s not a bad idea to run the separate pieces of your poultry shears through a washing cycle after use. All cutlery should be closely examined to make sure the construction is seamless – any loose parts which allow for some wiggling pose a possible hazard. Rivets should be secure and there should be no irregularities which could harbor germs and breed bacteria. It’s a good idea to inspect your cutlery on a regular basis. Knives should never be placed in a dishwasher as the hot water coupled with the intense heat of the drying cycle can damage the handles and compromise the structural integrity of the implement.

The best way to clean a kitchen knife is the way professional chefs do – wipe it clean with a damp cloth. Knives should never be submerged in water for any length of time and they should always be thoroughly towel dried before storing. A knife block is great for storing knives as it protects the blades; when you put your knife block on the kitchen counter it keeps cutlery handy and safe. A Kapoosh® knife block is exceptionally versatile and great for storing an eclectic array of cutlery.
