Homemade Chicken Nuggets for Snacking on the Go




One of my favorite snacks when I was a kid was the chicken nuggets, actually it still is.  However, during my younger years snacking on these fast food treats are considered as a fad without any thought on the health implications of eating greasy and high in sodium fares.  Nowadays, there are healthy preparation options that you can go for in order to enjoy these snacks in and out of the house. 

There are two ways to go on this snack, one is to get the frozen variety in the grocery and fry it using vegetable oil.  Another way is to prepare it from scratch and fry it in healthy oil.  It may be a bit more tedious but this can help you regulate the amount of sodium, fats and oil and other ingredients that you put in your snacks. I prefer to do it the hard yet healthier way so here is my simple recipe for Homemade Chicken Nuggets:

Ingredients:

Chicken Breast cut into bite sized pieces

Egg

Flour

Oatmeal

Low fat Mayonnaise

Salt and pepper

  1. Spread a light coating of mayonnaise on the chicken breast
  2. Beat egg and dip chicken breast quickly
  3. Coat the chicken with a mixture of flour seasoned with salt and pepper
  4. dip it back in the egg before coating it with oatmeal
  5. Fry nuggets in vegetable oil.  Drain oil after frying, Use paper towels to dab off any traces of oil that may be left on the nuggets after draining.

These treats are also good for snacking on the go. Just like what we did when we went to fetch my husband from a meeting on Basics of Business Ventures and liability insurance for small business.  I wanted to make sure that the kids have some filling stuff to nibble on just in case the meeting extends and we had to wait longer for our family lunch.  We just packed it in a lunchbox along with a packet of mayonnaise, which little Jakei simply must have on his nuggets, and went off.  As predicted, we were a bit early and it took only a few minutes of waiting before the kids asked for their nugget treats.
