Sweet Lovin’ Carrot Cake

Kids are seldom fond of vegetables.  Most of them try to avoid eating vegetables as much as they can.  Too bad mom’s are equally resourceful when it comes to putting vegetables in a child’s diet.  One sweet way of getting kids to eat their veggies is by putting them in desserts just like the classic carrot cake.

Carrot cakes are made of batter, grated carrots, and topped with cream cheese icing.  The carrots are subtly added to the cake, its natural flavor blending with the cake dough, and other ingredients creating a sweet and delectable treat that kids and adults will love.  Some carrot cake variations include ingredients like raisins, nuts and pineapple.    My kids go crazy over moist carrot cakes with raisins and walnuts.

The popularity of this dessert makes it easily available for those who are craving for it.  Carrot cakes are available in most bakeshops and served in most cafes and restaurants.  We tried an improvised carrot cake by adding grated carrots to a ready-mix formula of banana bread and the kids still loved it.  One of the best carrot cakes that we’ve tasted is the 9’inch carrot cake from Old Swiss Inn.

Wherever you are in the metro, there would most probably be a bakeshop that offers carrot cakes.   Not only are they delicious, they are also very nutritious.   Carrots have high vitamin A content which promotes good eyesight.  They also have calcium and other nutrients that are good for our skin and bones.
